    Talking Getting back a pork byproduct thread!

    Anyway I was talking about having Ham for Christmas , we always have ham on Christmas and Turkey on Thanksgiving. Anyone else do this?

    Forget the Ham- KILL A GOOSE! Christmas goose is always the way to go, at least out west.

    I HATE turkey. I can never cook it(or anyone esle for that matter) so it is juicy. It always turns out dry and served with gravy.

    Scooby I have been able to (only in tha past few yrs acomlish that. You gotta brush the entire outside with olive oil then season it it lock the juices in in a crispy shell.

    We usually have goose and we also have some venison.

    But there is usually some ham in there somewhare.

    oh hell yeah, I put cut pieces in tin foil with onion, salt, spices, and a bit of garlic. Put that in the oven and it is great. Almost like venison and grilled onions

    yeah scooby I always had a dry bird then I tried the olive oil thing and seasoning the **** ouuta the skin w/a lot of salt it won't turn out salty too much bird for that it made it crispy (the skin) plus I don't cook it overnite anymore I put it in that morning and use a meat thermomenter

    Found a recipe a few years back...use a bottle of champagne! Pour it in! Butter under the skin. Amazing!!
