    Salad Dressin

    Im always looking for a new salad dressing cause I get so bored with the oil & vinegar or bottled stuff and I finally made one that I think is awsome

    1/2 c fresh blackberries (or raspberries)
    1/2 cup Balsamic vinegar
    1 cup Extra Virgin olive oil
    2 lg shallots can use some onion instead
    1 clove garlic
    salt
    fresh ground pepper

    but all ingredience in blender except olive oil. Bend well then very slowly add the olive oil (by adding it slow the dressing won't ever seperate in the refrigerator) If you want a sweet dressing add equal or no sugar sub.

    Blackberries have 8 g carbs for 1/2 cup and it makes a lot of dressing so i don't worry about the carbs in this case. A little goes a long way on a salad too.
    Anyone else have a favorite?

    i eat a lot of salads. but i dont get into making my own dressings. i use fat free honey mustard. a little goes a long way with this one too. i can remember years ago i used to use mayonaise. yuck
