Food and Time?
Im a hard gainer with a very fast metabolism.I eat very well on the weekdays when I train but eat very poor on the weekends due to work....I normally eat five meals a day Mon-Fri but eat around 3 sometimes 2 times a day Sat and Sunday.Can this affect any gains I might have in the future??

It will affect your gains. If you can't eat too good on weekends then at least pack yourself with protein.
