Title: Hush Puppies
Categories: Breads, seafood
Yield: 18 servings

1 large egg, beaten
1/2 can buttermilk or sour milk
1/4 can green onions, finely chopped
1 Tbsp water
3/4 can cornmeal
1/4 can all-purpose flour
2 Tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground black pepper

In a small mixing bowl, stir together egg, buttermilk or sour milk,
green onions, and water.
In a medium mixing bowl, combine cornmeal, flour, sugar, baking
powder, baking soda, salt and pepper.
Add egg mixture to dry ingredients; Stir just until moistened
In a heave saucepan or deep-fat fryer, heat about 2 inches of melted
shortening or oil to 375 degrees.
Drop batter by tablespoons into hot fat frying only a few at a time,
about 2 minutes or until golden brown; turning once. Drain on paper
towels. Keep warm in a 325F oven while frying remainder.
