This OK for Fibrous Veg?
Hi All,
Saw them do this on some TV show and wanted to check that it's ok to use in a protein/fat meal using fibrous veg. It's a recipe for a sort of mash.
- Steam around 200g cauliflower or brocolli florets until tender.
- Add your choice of seasoning allow to cool in the fridge.
- Transfer to a handheld food processors/magimix.
- Wizz up until smooth. At this stage its a bit grainy
- Add around a tablespoon of olive oil (or perhaps other healthy oils like flax or grapeseed). Wizz for a further 20-30 seconds. The oil will make it very smooth.
- You can also add extra flavours, such as 2-3 cloves of garlic which were steamed along with the veg until soft.
It is virtually the same as steaming and having with healthy fat right? I don't believe the blending affects the nutritional value, correct?

Of course I like using one of those chinese bamboo steamers, doube layer. I steam some chicken or fish on the bottom, veg on top. Can then make the mash and sit the meat on it. Then again that might be the 'presentation is everything' kicking in from those darn cooking shows!
