What to eat during these times?
I just joined the gym. However the times for me to go is at night, between
7-9PM. Just wondering on what to eat before and after?? I'll be doing cardio at home in the morning before I eat breakfast, but mainly hitting the weights at night.

Before Workout: pro/carb
After Workout: whey isolate with dextrose
Before Bed: pro/fat

Ideally, you want two carb/pro meals after working out, not pro/fat after consuming dextrose in the meal prior, which raises blood sugar like a bat out of h*ll. Remember, I said ideally.

Err, anyways, back to the question. It's the fastest acting (digested) simple sugar. You want to have quick acting carbs in your system along with quick acting protein as soon as possible after training.
