Good diet for an amateur boxer

Would this be a good diet for someone who is a competing amateur boxer. I'm 24 6' 215 and in a couple of months I would like to start competing again in boxing. I have altered my old diet, which you can see here:

    http://forums.steroid.com/showthread.php?t=120587

I have included brown rice and eliminated steak and natty pb from this diet.

    Well here it is:

    1)Breakfast 5:15 am

    5 egg whites
1/2 cup of oatmeal with splenda and cinnamon
Whey protein shake (1 scoop, 27.5 g of protein)
cup of green tea with splenda and a little nonfat carbcontrol milk
multi vit, 500 mg vit c

    2)Brunch 8:30 am

Whey protein shake (1 scoop, 27.5 g of protein) with 1 tbsp of flax

    3)Lunch 10:30 am

1 3-4oz. chicken breast with spices
1/2 cup of instant brown rice

    4)Snack 1:30 pm

196 g of albacore tuna with one tbsp of full fat mayo
    500 mg vit c

    5) Pre Boxing Workout Meal 3:30 pm

1/2 cup of oatmeal with splenda and cinnamon
Whey protein shake (1 scoop, 27.5 g of protein)
    1 medium sized red apple

    6) Post Boxing/Pre Lifting Workout Meal 6:15 pm

1 3-4oz. chicken breast with spices and marinade
    baked potato with pepper
    1 medium sized red apple
    500 mg vit c

    LIFT 8-9:30 pm

    Post Lifting Workout Shake

    IMMEDIATLY AFTER MY LAST SET

    Whey protein shake (1 scoop 27.5 g of protein) with (5 scoops) 57.5 g of Dextrose/carbs

    7)Bedtime meal 10:30 pm

Whey protein shake (2 scoops 55 g of protein) with 1 tbsp of flax

    Sleep 11 pm

I'll also be drinking 2 gallons of water a day.

As you can see I am unable to have a PPWO pro/carb meal because I get done lifting so close to bed time.

    A couple questions:

    1) Is this enough carbs to fuel me with energy for the day?

    2) Is this enough carbs to keep me from losing weight and muscle and getting skinny?

    3) Is this a good amount of carbs where I won't get fat?

    Thanks bros!
