anything protein--- ideally you want a slow digestive protein source, like casein, but otherwise, eat lean meats with maybe some good fats. Fat slows digestion down, so if you drink a whey protein shake, plain with only water, flax oil, natty pb, or some boiled eggs, it will take longer to digest, so your body will only be in a catabolic state for a short amount of time.

Popcorn popped in an air popper with no butter and no salt (or VERY little salt) is fine. But, the microwave popcorn generally has tons of fat in it. Check out the nutrition info on the package and compare brands. Also, look out for transfats.

There's really two issues here...If popcorn is ok to eat overall and if it is, if it's ok to eat late at night...
1 cup of Unbuttered poporn usually has a GI of 55 and contains 6 grams of carbs...It's by far not your best option for a pro/carb and a no-no for a pro/fat...With that being said, you should not be having anything other than a pro/fat as your last meal of the night...
Other snack ideas would be deli/lunch meat, or jerkey...

Either way, i would never put carbs in the last meal. Raising nsulin so late will interefere with the natural GH pulse you get after you go to sleep.
