    Soymilk

Does soymilk count as dairy? Will it give muscles a smooth appearance as true dairy does?

It's not dairy, since it is not derived from milk that came from an animal (cow, goat , sheep, etc)
It is made from pressing soybeans (so, really, it's soyjuice) and adding sugar, calcium (although it does contain some calcium, many varieties are fortified with Ca and vitamin D) flavoring, etc.
It does not contain complete protein. However, it is a good food product - soy is good for health in many respects, it does have a significant amount of soy protein that can be a part of your diet. plus it's tasty

    It doesn't count as dairy.

Whether it gives you the 'smooth' look that's the usual byproduct of dairy ingestion depends on the sugar/sodium content of the brand you choose.

If it's low-sugar...you generally won't get the puffiness

The type of sugar used is a determining factor also. The lactose and galactose of milk are generally what give the puffy look. I think soy products are sweetened usually with sucrose or fructose. These two can cause puffiness but not usually to the extent of Lactose or galactose
