cooking oils
I use alot of olive oil, but what is best (healthiest)for frying fish in a pan and so on,
vegetable oil, canola oil, sunflower ??

Fat at fat calories are not the enemy but you have to watch how much you're using.
For fish I use olive oil but I also use other healty fats such as safflower and peanut oil for other dishes. It really depends on what I'm cooking. However, I never deep fry or really fry that much at all. When I do I only use a little bit of oil to keep it from sticking to the pan. I do NOT saturate the meat in it.
