Do i need to stop my bulk and start again or keep going to keep bulking?

ive been somewhat bulking for about 6-8 weeks and have seen a little gain (but also kind of trying to get back into working out). right now i have a great diet and am back to where i was when i was juicing last year. what i would like to know is in order to do a serious bulk should i throw a screw into my current diet so when i start bulking again it will trick my body, or should i eat the same as i am eating except more each day.

    i am 6-3, ~194
right now my diet is all pro, pro/carb, and pro/fat meals. im just not sure if im eating enough calories. i get an easy 200-250g pro/day, but i think i need more of everything else, like carbs. i have dextrose on the way for pwo w/ my pro.

yeah sorry i wasnt very clear. here is an example day, not that i do this all the time every day but this would be a good day of eating i guess.
    4am- 1cup dry oatmeal, 3 cups skim milk = 570 cals
    -at work:
7am - ?, maybe chicken breast, tuna, or some crap like pop tarts or clif bar, depends on how lazy i was when i packed the lunch the night before
    10am- baked beans, 50g pro shake = 730 cals
1230pm- chick breast (1/2 lb uncooked), or tuna and rice cakes = ~350 cals
    2pm- workout
    -home from work:
330-4pm- pwo shake 50g pro, i eat a carb meal right after like some rice, i know i need dex too! =~500 cals
5-6pm- soup with added canned chicked breast, maybe tuna and flax or fish oil = ~500 cals
    8pm- 50-70g pro shake =~250 cals
sleep- ~7 hours, i know i need more.

i dont have a strict "this is what i eat every day" yet because my work schedule is so different every week. anyway this is an average day, some days i will not eat like this but some days i eat much better.
