    G1,

    If you have a Foreman grill (or something similar) use it. It keeps the chicken moist. Just be sure NOT to overcook it, then it gets dry and bland. I have a plug-in counter top grill that works very well. DB101 mentioned this before and I do the same thing...if I'm cooking 8-10 chicken breasts at once, I will slightly undercook them. That way when you reheat them in the microwave later that week, you are finishing the cooking process instead of drying the chicken out.

    Word of caution...it is better to eat chicken that is overcooked , than undercooked (breast should be white all the way through, no pink).

    Ummm Geo, what kind of chiken are you buying? Make sure that it is VERY fresh, or it will take on a bad flavor and texture.

    I started cooking my own meals about 2.5 years ago, and went through the same thing at first. Advice: Buy high quality and very fresh and don't let it sit in your refrigerator;

    Chicken

    geometric1,
    There are hundreds of ways to prepare chicken. Let's see where do we start hmmmm. You said that you could not take in sodium. That sucks as many reciepes do have seasonnings that are loaded with the stuff. Iwan2bsolid2 posted a reciepe about My thai chicken that you might be interested in looking at. I'll try to look some sweet and sour type recipes and get back to you. Damn this is gonna be fun! Just wait, I'll have you cooking in no time!!!! I can't wait......

    Really don't knock it GenuinePL. Believe it or not my father has eating the same diet for years and every day he eats tuna sandwhiches with Tabasco sauce on them. At first I thought that this was really gross but I treid it and you know it ain't half bad. I've got to admit that I think the big guy may have stumbled onto something. So I'll have to back Doc40 up on this one. As woerd as it sounds it ain't all that bad.

    What I meant was that he made his tuna up the way he regularlly does, Yu know Fat free mayo, ect. He just put tabascco sauce on top of it for flavoring. You know several dashes here and there to spice it up.

    I don't know

    Although I have not tried it yet ptbyjsason said it was actually pretty good. The latest grave with tuna around here is to mix it straight with barbecue sauce. I have yet to try that one but I think I gonna give it a go this afternoon when I get home. As far as straight hot sauce? I'll try it. I always up for somthig new!
