Kasha (buckwheat)
Hi all,
I have a few Q's regarding kasha, aka dehulled buckwheat. I recently came about them at a health store and was told they're a good alternative to oats. Indeed, they are a great change - easy to make, tasty, and being on a 'low carb lifestyle', having a bowl of kasha with around 35-40g carbs is REALLY filling!\
My question is: how long do you guys normally prepare it (those who use it of course ). Some packs say 20-25 minutes, some say 5-10 minutes! The reason I ask is since I would like to know the impact on its GI. Will the same thing happen to it that happens to rice - boil it for a bit too long and the GI shoots to 90?? It's good a very good GI rating of around 45 and a GL of about 10, which makes it perfect complex carbs, so I don't want to lose that quality by overcooking.
