Dynamic Nutrition for Maximum Performance- a down and dirty look into sports nutrition with a lot to learn from the ground up. Has sport-specific diet plans as well. Very good reference book. I have seen Hatfield and Gesteau's book, Dynamic Nutrition for Maximum Performance get copied a lot (nearly word-for-word) in smaller publisher's books.
Ironman's Ultimate Guide - some of my favorite writers - they are very... sarcastic I guess. They plug the Muscle Link line a lot but they give lots of good info.
Barry Sear's The Zone - it gives a lot of detail on the role of carboydrates and insulin response to eating. It has good theories on nutrition in it.
Other than that - there are more out there. But these are good ones.
