    List of Fibrous Veges

    Hi there,

    I am having many vege's throughout the day, being on a relatively low carb diet. There are a few I always use but some I am not sure of because they may have too many sugars or cause too much of an insulin spike. Can anyone help clarify and add to this list??

    Fibrous (can eat almost freely along with a lean protein source and healthy fats of course )

    brocolli
    cauliflower
    celery
    green pepper
    cucumber
    baby marrows
    aubergine (eggplant)
    patty pans (think they are called baby zucchini)
    baby gem squash

    ones I am not sure of:
    red onion
    celery
    red pepper
    tomatoes (especially the small, sweet ones which are awesome)


    I am trying to get some variation in the diet by adding new things either raw (eg. for salads) or to steam/stirfry.

    will do. i am trying to get some more 'colored' veges in simply cause they have flavor do you know which of these are okay in terms of being low enough GI and high fiber:
    tomato, red pepper, red onion/shallot

    i know i must keep away from things like carrots, corn, peas, sugarsnaps etc.

    I'm not 100% sure on this but the onions and bell peppers should be ok, tomatoes...not sure. I'm allergic so I don't eat 'em any way. Almost all veggies are ok to eat. I read swolecat saying that carrots are high GI or something like that.
