i have always been told to weigh the meat after cooking--because it is retaining water before you cook it-- i always measure afterwards for more accuracy and if i have to eat out i order a 10 oz steak at least because i know after its cooked it will be about 7-8 oz.

a good friend of mine is a nutrionist and said that calculating nutrition facts on meats should be done after you cook it.
