The skin is probably included in the nutritional value of the potato on the lable. However, I would suggest that either you peel/remove the skin or make sure you scrub the skin clean before eating, as there may be pesticides and/or fertilizers still on the skin.
The skin on some fruits and veggies holds almost all of the fiber content in the food. Not too sure about potatoes though.Quote:
