Normally I usually eat just sweet potato. But is there really a big difference between red potato, white potato and sweet potato? Do each digest differently? How do they react in the body? I know much of it is trial and error, but just curious what the differences are with regard to contest prep.
Sweet Potato tastes much better.
Sweet potatoes have more fiber; whereas, white potatoes have more minerals

There is really nothing to a regular potato. If you just ate a plate of skins you may get a few minerals. If you are just looking for empty calories then have at it. Potatoes were my staple for many years and now they are a cheat. Don't get me wrong, they taste great and I love them, but can you think of anything less nutrient dense? Water maybe? I honesty can't think of any reason to choose a regular potato over a sweet unless you just prefer the flavor.

White potato is officially high GI but as soon as you combine it with another food it changes anyway.
OP it really doesn't matter what choice you make, assuming that the remainder of your diet contains a multitude of different foods in all macro groups and you hit your cals and macro's then you will be gtg.

I also like to make hash with them. Grating them through a cheese grater, adding onions, green onions, bell peppers, cheese, mushrooms, bacon, and finishing with some sour cream. Yummy!
I like them both. Until recently I wouldn't touch a sweet potato now I find myself nuken one and just eating it plain like an apple or something. Sometimes I'll throw a little bit of honey butter (3-5 grams depending on size of potato) and brown sugar (again 3-5 grams) and it tastes pretty damn good!
On the other hand it's tough to beat fried potato's with some onion, salt and pepper...
