    Grilled Portabella Mushrooms

    Ingredients:
    1 pound portabella mushrooms
    1 tablespoon light miso
    1 tablespoon balsamic vinegar
    2 tablespoons water
    2 teaspoons olive oil
    10 ounces fresh spinach, stemmed and rinsed

    Prepare a grill.

    Carefully brush or wipe off any soil form the mushrooms. Trim the tough portions of the stems and cut the mushrooms into 1/2-inch-thick slices. Whisk together the miso, vinegar, water, and oil. Brush the mushroom slices with the marinade and place them on a grill for about 3 minutes each side until the mushrooms are browned and beginning to soften.

    Meanwhile, steam the spinach in a covered pot on high heat, using only the water clinging to its leaves, for 1 or 2 minutes, or until just wilted but still bright green.

    Spread the steamed spinach on a serving platter, arrange the mushrooms on top and serve right away.

    Serving Size:
    2 as a main dish, 4 as a side dish

    10 minutes

    Thanks Tigress, I'm on my way to the store right now anyways, I may get some portabellas and try this one out !

    Well I saw the p'bellas at the store and they looked kinda icky so I passed on them tonight. Just got the steaks, milk and dog bisquits (no I didn't eat those LOL).

    I'm going down to the produce store tomorrow, Norman Brothers, and will look at theirs and see about getting some. They always have fresher (but more expensive) stuff there.
