Tuna Salad with Olives, Oranges, and Bell Peppers

1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon minced garlic


2 large oranges, peeled and segmented (you might want to remove the seeds, or use canned, drained mandarin oranges
1/2 small red onion, sliced
1 9 oz. can water packed tuna, drained and chunked
1/2 red bell pepper, sliced
1/4 cup chopped green olives
Salad greens

Whisk together oil, vinegar and garlic.Toss the rest of the ingredients together and season with salt and pepper. Mound on salad greens. If you are feeling like Emeril today, garnish with sliced almonds and yell "Bam!


Its a little bit of a lighter recipe and I only really use this as a snack but I guess if you doubled up on the amounts and stuff you could make a nice meal out of it.
