I'm sure some or variations of these have been posted:
But, I thought I would throw some of mine on here. Eat and Be merry!
Fat Free Banana Loaf

3 ripe bananas
½ cup applesauce
¾ cup splenda
3 egg whites
2 cups whole wheat flour
1 tsp baking soda
½ tsp salt
½ chopped almonds (optional)

Preheat oven to 325
Beat eggs, add other wet ingredients into one bowl
Mix dry ingredients into another bowl. Blend all ingredients
Together lightly than pour into loaf pan, and bake for 50 min. or until toothpick comes out clean. Let stand for 10 minutes.


Oatmeal Cookies

5 egg whites
1 ½ cups Splenda
Cinnamon to taste
Sugar free syrup to taste
1 cup quick oats
2 cups of old fashion oats (add more if you find a little runny)
Peanut Butter (optional)

Bake at 450 till lightly brown…approximately 10 minutes

Mocha Cheesecake

1 ½ cups low fat wafer crumbs (about 24)
1 ¾ cups plus 1 tbsp splenda, divided
1 tbsp low fat margarine….melted
1 tbsp water
1 container of low fat cottage cheese (16 ounces)
2 packages of low fat cream cheese, softened (8 ounce each)
½ cup unsweetened cocoa powder
¾ cup all purpose flour
2 large eggs
2 egg whites
¾ cup strong brewed coffee

Preheat oven to 325, spray a 9 inch pan
Combine crumbs, 1 tsp splenda, margarine, and water in a bowl. Press mixture into bottom of pan. Bake for 15 minutes. Place on rack to cool.
In a blender with metal blade, puree cottage cheese.
In a large mixing bowl, using electric mixer on high, beat cream cheese with cottage cheese until fluffy. Add remaining splenda, cocoa, and flour. Beat eggs until smooth. Stir in coffee. Pour into baked crust.
Bake for 1 hour.
Turn off oven and let cal cool with door ajar until completely cool.
Run knife around edge of cake. Chill for 4 hours. Remove from pan.

Low fat Banana Muffins

1/3 cup applesauce
1/3 cup raw honey
4 scoops whey protein
1 ¾ cup whole wheat flour
1 tsp baking powder
½ tsp baking soda
3 ripe Bananas
1 tsp banana extract
Chopped Walnuts (optional)

Preheat oven to 350.
Mix 2 scoops whey protein, flour, baking powder, baking soda all together.
Add applesauce, honey, mix in mashed bananas, 2 scoops whey protein and ½ cup water.
Fill nonstick muffin pans ¾ full with mix
Bake 8 – 10 minutes.

Makes 12 muffins.

Low Fat Pancakes

3 Egg whites…beaten
2 ¾ cups fat free milk
¾ cup applesauce or a mashed banana
2 cups whole wheat flour
2 tsp baking powder
2 tbsp. Splenda
1 tsp. salt.

Blend all dry with wet ingredients with a whisk…and fry up golden brown with non stick Pam.

Everyone has their version of the Protein pancake, but this one is for your cheat days.
