    Salmon Davis Jr - For Big Al

    I remember that in one of your past post you mentioned that you liked salmon a lot. So here is a couple for you Big Al, I hope that it might help with your present diet concerns.

    Salmon Davis Jr.
    (Broiled salmon steaks marinated in a spicy tomato sauce.)

    1 tsp butter or margarine
    1/2 cup diced red onions
    1 clove garlic, minced
    1-1/2 cups diced plum tomatoes (Fresh)
    3 tbsp each ketchup and brown sugar
    2 tbsp each lime juice and Dijon mustard
    1 tbsp chili powder
    2 tsp Worcestershire sauce
    1 tsp paprika
    1/4 tsp each ground cumin and cayenne pepper
    6 salmon steaks, about 6 oz each

    Melt butter in a medium, non-stick saucepan over medium heat. Add onions and garlic. Cook and stir for 2 minutes, until the onions begin to soften. Add all of the remaining ingredients except for the salmon. Mix well. Reduce heat to a medium-low. Cover and shimmer for 20 minutes. Transfer mixture to a blender or food processor and puree until smooth. Let cool.

    Arrange salmon steaks in a single layer in a glass-baking dish. Pour marinade over salmon. Turn pieces to coat both sides with the marinade, or brush marinade all over the salmon using a pastry brush. Cover and refrigerate for 1 hour.

    Remove salmon from marinade and place on a baking sheet. Broil about 4 inches from the heat source for 3 minutes. Carefully turn salmon over and broil for another 3 to 4 minutes, until done. Be careful not to overcook the salmon, or it will be very dry. Serve immediately.

    Makes about 6 servings

    Thanks Tobey, bought ten salmon fillets yesterday and now I have something interesting to do with them!
