Chicken Black Bean and Avocado Salad
Just made this! We loved it.
1 can (14.5-oz.) black beans, drained and rinsed
2 avocados, pitted peeled and cut into 1/2-inch cubes
1 tomato, chopped
3/4 cup frozen corn, thawed
1/2 small red onion, peeled and minced
1 lime, juiced
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup low-fat mayonnaise
2 cups cooked cubed chicken
6 cups mixed greens
2 tablespoons chopped fresh cilant
Mix black beans, avocados, tomato, corn, red onion, lime juice, cumin, salt and pepper in a medium bowl. Toss with mayonnaise until evenly coated.
Portion greens on four plates. Top with black bean salad and cooked
chicken. Garnish with cilantro.

Girl what would I do without you posting here in the receipe section.
Actually I need to get off my lazy ass and begin posting different reciepes or I might just have to hand my custon title over to ya! LOL

Babe, I got your back! No worries. I am just looking forward to the day that I get to cook for the iron chef.
Actually, I will prob be posting a lot in here now that i have finally gotten off my lazy ass and started dieting. Whenever I try something really good I will post it here.
