2 zuchinnis, shredded
1/2 onion, shredded
1 egg, beaten
Salt and pepper to taste
Heat pan to medium, adding in Pam or - No fat spray.
Mix together all ingredients. Try to squeeze out excess liquid, as the hash browns may get too watery.
Form into patties and fry for about 8-12 minutes, depending on how crispy you'd like it. Tastes good with shredded cheese on top for garnish!
