    Brown Rice Salad

    I started throwing some stuff together the other day and this came out awesome!! This is real easy and inexpensive.

    Brown rice, cooked, cooled 4cups (use beef broth for the liquid)
    Cilantro, chopped 1/2 bunch
    Tomatoes, diced 1 can (can use fresh but the juice in the can adds moisture)
    Black beans, canned, drained & rinsed 1 can
    Avocado, diced 2ea

    Roasted Veggies (Roasted on the BBQ and then cooled)
    Yellow bell pepper, chopped small
    Orange bell pepper, chopped small
    Jalepeno, 1 ea (if you like spicy 2 would be good)
    Onion, med 1ea (cut into thick rinds forthe bbq)

    Directions:
    Place the bells, onion & jalepeno on the grill, when they start getting soft, take them off & place in the fridge. (if theres some char spots you can either peel them off or add them to the salad it doesnt change much)
    While veggies are cooling, place in a big bowl, rice, cilantro, black beans, avocado and tomatoes.
    After veggies have cooled, chop small, add to other ingredients and mix well.

    I actually just threw some brown rice on the stove top without a plan, lol. Figured I'd come up with something. I have most of your ingredients so I think I'll give it a go.

    something also tasty is brown rice (cooked, chilled) with pomegranate and cherries (de-seeded, and also chilled). The taste is unusually good. Defiantly passes as a "dessert" if you are dieting.

    another version is to use brown rice (cooked, and chilled), with pineapple (in pieces... tastes better if fresh and not from tin), coconut (shredded) and marshmallows (the little ones).... OMFG best salad ever.
