This is another quick and easy way to cook your chicken or turkey! Serves 12, 4oz protien, 8oz sauce, 4oz pasta.

Ingredients:
Flour, 3/4 cup
Italian seasoning, 3tbls
Chicken or turkey cutlet/breast, 4oz ea, (3lbs) pound out to make a nice consistent thickness.
Margarine 2oz
Olive oil, 3tbls
Mushrooms, sliced, 1 1/2 quarts (about 2lbs)
Onions, diced, 1 cup
Garlic, chopped, 3 tbls
White wine 3/4 cup (if you dont have or dont want to use wine, replace with chicken broth)
Tomatoes, canned, crushed, 6 cups (about 3 cans)
Basil, fresh, chopped 3tbls (if you are using dry, start with 2 tbls and add more if necessary)
Linguine, cooked 6 cups (can use wheat noodles)
Salt & Pepper to taste

Directions:
Mix flour, 1 tsp salt, 1 tsp pepper and Italian seasoning.
Cover (dredge) protien in flour mix
Coat a pan in cooking spay, add margarine and olive oil, melt. Add protien and brown on both sides. Remove protien when cooked.
In same pan saute garlic and onions in margarine until lightly browned. Stir in wine and bring to a boil.
Add remaining ingredients and simmer for five minutes.
Place protien on noodles and top with sauce.
