    Shrimply Irresistible

    Ok, this ones for the seafood lovers of the bunch. Hope that you like it.

    Shrimply Irresistible
    ( Marinated,grilled shrimp skewres with fiery fruit salsa)

    3 tbsp reduced - sodium soy sauce
    2 tbsp each lime juice and brown sugar
    1 tbsp each olive oil and ketchup
    2 cloves garlic,minced
    1 tbsp ground coriander
    1/2 tsp ground cumin
    24 fresh or frozen uncooked jumbo shrimp (Thaw first if using frozen)

    Fruit Salsa
    3/4 cup orange segments
    3/4 cup peeled,cored, and diced Granny Smith apples
    2 tbsp lime juice
    2 green onions,white part only,minced
    1 tbsp chopped,fresh mint or cilantro
    1 tbsp sugar
    1/2 tsp crushed red pepper flakes
    6 wooden or metal skewers

    In a small bowl, combine soy sauce, lime juice,brown sugar, olive oil,ketchup,garlic,coriander, and cumin. Remove the shells from the shrimp,leaving the tails intact. Pour the marinade over the shrimp in a shallow glass baking dish or a heavy duty resealable plastic bag. Make sure that each piece of shrimp is coated with marinade. Refrigerate for 1 hour. If using wooden skewers, soak them in water until ready to use.

    Meanwhile, prepare salsa. Put all salsa ingredients in a blender(Billy ought to like this part) or a food proceesor and pulse off and on until the mixture is pureed. Pour into a small,glass serving bowl and refrigerate until ready to serve.


    Remove sgrimp from the marinade and thread 4 pieces onto each skewer. Grill over medium-hot coals for 3 to 4 minutes per side,basting with extr marinade. Serve immediately with fruit salsa.

    Ahhhhh.....pretty close. I'm a marketing Director for a Seafood producer/processor/manufacturer...big company. I love this job. Since I've worked in this industry I've been to Toronto, Montreal, Boston, NYC, Jacksonville, Chicago, Minneapolis, Denver, Pheonix, Las Vegas, Los Angeles, Honolulu, San Francisco and Seattle. Plus I get lots of frozen Seafood...mostly Haddock fillets, salad shrimp and scallops. Also smoked salmon (I'm the director of our Smoked Division). Sorry to ramble.

    Would'nt you have freaked!

    Would'nt you have freaked out if I said, A firsherman,naw a resturant ouwner, NAAAAAW Oh I got it, your a marketing director and processor for a manufacturer. A really dig manufacturer at that. Is that right???

    Actually, when I graduated last year I went to work in the lab of a steel mill and when the guy's went on strick I went to work in the mill itself. It was hard ass work but at the time I had little choice. Hours sucked too 7 days on 1 day off 12 hours a day, and I still worked out. Anyway about 8 months ago I got a break. The State had responed to a placement test that I took for a pollution control specialist. I currently work for the the State in their enivronmental department which was what my degree focoused on.( Environmental Biology) I run air monitors across the state measuring everything from ozone to particulate matter floating around in the air. It is great. I get every dead guy who every did anything important birthday off with pay! Workout in the morning, shoot over to the state gym at lunch for another quick hour of weights, jogg in the afternoon and here lately I have been meeting my girlfriend up at the gym in the afternoons to get in a extra workout while she goes through her routines (Although most of the time I spot her and socialize as I have already finshed everything) Life is good! And yeah, I love my job too!

    LOL.. My girlfriend has the same Degree and does pretty much the same thing she works for the state of AZ.... I would joke, that she was the only one with a job like that!! Nows theres two!! ... LOL, She had her head buried in books for 5 years crazy, crazy

    my dad too

    he owns a firm that owns couple BIG BOATS that catch fish and stuff...... and my dad and me were in every place in the world....


    germany switzerland danmark usa uk africa and many more that i don`t remember because iwas litle though i do remember that like 10 years ago when me and my dad were in germany my dad rented a laborghini for 2 weeks! ithink it was the countach in yellow color.........

    but i don`t like to brag about it!
