    White Chili

    I got a new reciepe book last night. As a general rule I do not bother with recipe books of this nature as they rarely ever lost the caloric intake of the meals and most of them as meals that are not all that healthy for you anyway. Being a fan of country music I had to skim through and check it out. In it different country western stars listed their favorite reciepes and some of them are really good . Here are a few that I think are pretty good.

    White chili

    1 lb. White beans, soaked overnight and drained.
    6 cups chicken broth
    1 tbsp. minced garlic
    2 medium onions, chopped
    3 tsp. oil
    4-ounce cans chopped green chilies
    2 tsp. ground cumin
    1 ½ tsp. ground oregano
    ¼ tsp. Cayenne pepper
    cups of cooked chicken breast, diced
    cups Monterey Jack cheese ( optional garnish)

    Combine the white beans, chicken broth, minced garlic, and 1 of the chopped onions in a large pot. Bring to a boil, reduce heat and then simmer. Cover and simmer this for 2 hours. While the beans are cooking, saute’ remaining onion in oil, add the chicken, cumin, oregano,and cayenne pepper. Add the chicken mixture to the beans after the 2 hours of simmering are up. Add the chilies and simmer for 1 hour more.

    You can also serve this with rice, fruit, veggies, bread or tortillas.

    This makes about 8 to 10 servings.

    This sounds really good, although it doesn't get cold enough for chilli here in Florida but I'm willing to give this one a try cold or not...
