The Skins Game
(Crispy potatoe skins topped with cheddar cheese and bacon bits)

3 Large baking potatoes
1 tsp olive oil
1 tsp seasoned salt
¾ cup of shredded reduced fat sharp cheddar cheese (about 3 oz)
3 slices of bacon cooked crisp and crumbled
1 tsp chopped, fresh cilantro or parsley
½ cup each of salsa and low fat sour cream

Wash the potatoes and pat dry. Pierce all over with a fork. Bake them at 400 degrees for 1 hour or until they are tender. Allow them to cool completely
Hint** you can cook the potatoes one day ahead, let them cool, wrap them in plastic wrap or foil and refrigerate them until you are ready to use.

Cut the potatoes in half lengthwise. Using a teaspoon, scoop out the flesh, leaving a ¼ inch thick shell. Slice each half into three wedges. Lightly brush both sides of the skins with olive oil.

Arrange the skins in a single on a coolie sheet that has been sprayed with a non-stick cooking spray. Sprinkle with seasoned salt. Broil the skins for about 5 minutes, remove them from the oven and sprinkle them with the bacon, cheddar cheese and cilantro. Return them to the oven and broil for 2 or 3 more minutes, until cheese is bubbly. Serve them hot with salsa and sour cream.
