I have a brutally long commute every morning so the faster I can get out the door, the better. Does anyone have any ideas for low carb breakfasts that I can make pretty easily and east in the car?

breakfast burrito....
4 eggs (egg beaters) cheese (low fat) salsa....
cooked the night before...
throw in microwave... and there ya go..
and an apple.
