Which is better for back thickness, bent over barbell rows or seated cable rows?

I would say bent over BB rows.

Seated cable rows w/ T-bar is the best Imo with proper form.

Seated cable rows are a good exercise, but Ive recently discovered bent over barbell rows, and my back has reaped the benefits. However, if your looking to build an awesome back, these need to be done in supplement to deads.
