It depends on what muscle group you're going to be targeting that day.
Delayed on-set muscle soreness occurs 24-72 hours after working a specific muscle group. If you're always sore after work, it may not be a good idea to train the next day, as it may lead to drastic over-training over time and hinder gains, as well as lead to unexpected injury.

Day 1:Chest/Bis
Day 2:Legs
Day 3: Off
Day 4: Shoulders/Tris
Day 5:Back/traps/rear delts
Day 6:Off
Day 7:Off
Every muscle gets at least 3 days rest before getting hit again directly or secondarily. If for some reason I am my tris are still sore when shoulder day comes around, I take an extra day off.

If you do only 1 body part a day be sure that you do a push day 1 and then a pull day 2, or vice versa. I pretty much do this except my arm day follows chest so I end up doing tri's the day after chest.
day1 - back
day2 - shoulders
day3 - rest
day4 - legs
day5 - chest
day6 - bi's tri's
day7 - rest
