How many Different exercises would be good to do for the same muscle in one day without over training that muscle?

It's not so much about how many exercises, but about how many sets. Also, it depends on the size of the muscle or muscle group. Larger muscles like those in the back or legs can handle more work than the smaller muscles like those in the arms. I usually aim for around 10-12 sets for smaller muscles, and 12-16 sets for larger muscles.
