Dip is a lot finer cut. You put it in your lip. Chew (Chaw in the South) is a lot longer cut and it goes in your cheek.
Dip is more effective at transferring nicotine into your system. I know people that can put a chaw in all day, but 5 mins. w/ some skoal straight and they're puking their guts out.
