    I am thinking about buying a half-carcass of a cow, about 250 - 300lbs of beef

I eat so much steak and it is so damn expensive in the city I began looking into wholesale alternatives. I could get a grass fed USDA half carcass of a cow for 2.00 - 2.80 per pound and a half carcass is about 275 lbs. Much cheaper than the city prices. I could store it in my parents chest freezer in their basement and fill my freezer from time to time when I visit.

It comes cut into sections then I would have to cut it into steaks, and I would vacuum seal the steaks with a sealer that I have.

Anyone else buy this much steak in bulk or ever think about it or am I nuts?

Some deer can be way too gamey tasting. I like the younger deer -- My neighbor gave me some steaks from a 8 year old buck and it tasted like garbage.

    That kinda seems high, I can get pretty lean ground beef for 1.89/lb here at a local meat shop.;

I sell beef, chicken, pork and seafood door-to-door. Our beef and chicken is great for bodybuilders.

We have excellent cuts. I can get 180 cuts for around 200 bucks.

The problem is you're shopping in Manhattan. Shop outside of Manhattan and the prices drop several $ a pound. I did and including cab fare I still saved money.

You can get some of the cheapest deals on meats and fresh fish if you head into Flushing, Queens and go to a Asian/Chinese market.

Cheap produce too, atleast 50% cheaper than most standard supermarkets.

$2.00/lb is a lot to pay just for the beef. I just bought a whole steer that had a carcass weight of 695 lbs. It was 1.29/lb for the carcass and 0.71/lb for cut and wrap. Just realize that you will only get a few good cuts of beef. A couple of tri-tips, 10 or so rib-eyes, some brisket, sirloin, stew meat, and a sh!t load of hamburger. Generally the butcher will through a ton of trimmings in with the ground beef, leaving you with hamburger in the 20% fat range.

Thanks for the info. Was it worth it for you? How many filets and sirloins did you get and about how many pounds of ground beef?

If they are fed on fescue grass it leaves a taste in the meat, you should taste milk where the heifer has eaten onions from the garden.Nasty
Grain fed has better marbling of the meat. Also all commercial beef is finished in a feed lot before market.

I went in Brooklyn. EVERYTHING was at least $2 less. Turkey, chicken, beef. If you have access to a car drive out even further. Either to Jersey or Long Island to do grocery shopping. Things are so much cheaper and the quality is better.

if you are trying to keep lean like most people on this board grain fed is not the way to go, grass fed beef can have anywhere from 1/2 to 1/3 the fat of grain-fed beef. that "better marbling" is more saturated fat....if thats what you're after go for it. i eat grass fed only

"Meat from a grass-fed steer has about one-half to one-third as much fat as a comparable cut from a grain-fed animal. Lower in calories, grass-fed beef is also higher in vitamin E and *****-3 fatty acids, which are thought to help reduce the risk of cancer, lower the likelihood of high blood pressure, and make people less susceptible to depression. Further, meat from grass-fed cattle is rich in another beneficial fat called conjugated linoleic acid (CLA), which supposedly lowers the risk of cancer. The benefits of CLA are so widely acknowledged that some ranchers who don't grass-finish their cattle add CLA supplements to their animals' feed once they're taken to the feedlots."

I am also looking into farms that sell "beefalo" beef. That is a cattle breed with a bison and they are lean like a bison but taste like beef. I found a few farms that sell it by the whole and half carcass
    http://cattle-today.com/Beefalo.htm

I also found a whole top sirloin from Freshdirect for 3.99lb.
