High-protein recipe - 10 mins and delicious (~500 calories, ~60g protein, ~20g fat)
Just wanted to share this recipe because, as the title says, it's my new favorite thing to eat! To preface this, I'll say that I eat A LOT of chicken and tuna, and I'm always looking for new ways to prepare. As for chicken, I live and die by grilled chicken breast, but I recently tried something new and I love it. It's quick and easy, healthy and delicious:
1 chicken breast (boneless) - i like to dice into small bite-sized pieces
Small handful (1oz or so) of cashews (remove these if ur cutting)
Small bundle of broccoli
Green onions
2-3 Tablespoons Sun-dried tomatoes (i just get the kind in a jar)
Cooking spray
So here's what you do. Spray a heated pan with the cooking spray and put the chicken pieces onto the pan. Spread the cashews and sun-dried tomatoes on top of the chicken. While this is cooking, also start steaming the broccoli. After about a minute or two, I take a spatula and flip the chicken over and allow the tomatoes and cashews to hit the pan and really start cooking. At this point I take some scissors and clip of the ends of some green onions (not too much, just a few snips) and toss in the pan w/ the chicken. After that, I use the spatula to cut the chicken into smaller and smaller pieces to speed up the process and make sure everything cooks evenly. After the chicken is cooked through I drop the broccoli into a bowl and put the chicken and other stuff over it and mix. I like to add a little pepper too. If you're not cutting, it's also good to get sun-dried tomatoes in oil and sprinkle a little oil on the chicken for flavor.

Good recipe dude! I'm always on the look out for "sexing up" my meals, as eating the same things over and over can get a bit montonous!
