Ground beef not browning on inside- Pink Slime?
I shop at Publix which is known in this area for quality food. Super short version. I went to one Publix and got meatballs and cooked them. They browned on the inside as they are supposed to do. The one closer to my house I am always buying ground beef and cooking meatloaf or meatballs etc. The meat does not brown in the middle even when subjected to longer cooking or higher temps. I am wondering if they have been mixing pink slime into the meat or something or what is causing this. The meat is fresh not frozen. It does usually sit in my fridge overnight but don't see why that should matter.

If a cow is under extreme stress prior to slaughter, the pH in it's blood changes which causes discolouration of the meat but also compromises the quality, taste and texture.
Whether it's that or they have been cutting it with something else, either way that doesn't sound good.

funny that it didn't turn brown at all after higher temps and cooking longer.

no idea on colour though, did you try cutting it in half and putting the inside pink bit directly onto a frying pan just to see if it will brown?

you ever try using a meat thermometer on the meatballs? I know that sounds a little crazy, but at least you'll know if the insides are getting hot enough.

Publix is by far the best supermarket in the USA. With that said I eat their 93/7 ground with the green label about 3-4 times a week. It's quality meat would not worry about if its cooked medium unless u r using eggs as a binder. Unless its your perfence on eating well done. Couple good suggestion here too, brown all sides in pan before oven, themp them while in oven 165+ for well. Cut them in half and seat if u want to make sure.
Publix is a huge factor on staying in the state of fl too. They should go national.

shoot i eat meatballs every day and i only cook them until the outside is fairly cooked and the inside is still in most cases what one would consider raw! i prefer them this way as the texture is great! sometimes the inside is still a little cool!
