Chicken + Rice Recipes...
So I'm getting really sick of the way I do my chicken and Im sure some of you got some great ones. Im looking for something really easy I can just add to my chicken when I pan fry it.
My favorite so far is normal brown rice. Pan fry up some thighs or tenderloins, low heat for a long time, cut them up in peices once cooked, turn down the heat add lots of ketchup and a little hot sauce, simmer for like 5-10 min. Really good and easy.
I also do terriaki and bbq sometimes but just bored of those.
What else you got? Do you ever throw anything in the rice cooker?

Food is not ment to taste good bra. Boiled chicken and and boiled rice no salt and no sauces. Maybe add some extra virgin olive oil on top of the rice/chicken once it served.

I mix in an avocado and a little salsa sometimes. Super easy and tastes great.

rice and regular plain chicken with frank zanes hot sauce. Taste very similar to the chicken hot wings minus all of the fat and sugars... With a nice glass of water.

Something my inlaws from peru taught me was to blend spinach and a little green pepper together with the water for your rice. Here in Canada when I cook this rice I just throw it in the rice cooker. Works fine.
With the meat of choice and a seasoning this can taste quite good

I prefer ground turkey. It it would work with chicken. I brown my turkey while i cook my rice (I prefer white). I cut up leaks, garlic, onion, sometimes spinach, mushrooms and cook them with the turkey. I throw the rice in with the turkey and add sirracha and some soy sauce. Tastes great.

I hate listening to stuff like this.
Eating is probably the hardest part of working out. If you're not enjoying your food, what's the point. You have to sex your meals up in my opinion.
Herbs. Sage, Tarragon, Thyme, Rosemary, Parsley are all winners. Just adding herbs to a dash of olive oil works wonders. Piri piri salt and piri piri sauce is amazing as well. Rice can also be boring as hell so add some peas or egg.
We all have to eat lots or right, but food should never, NEVER be a chore. I love food, and better still, I like good food.
I used to open packs of chicken, pour a bit of olive oil on, then chuck a liberal amount of mustard powder on. Then get your hands in there and rub it all in! I used to then pan fry the chicken (dont add any more oil on the pan) on a hot pan/skillet. Came out really nice. If you do lots in one batch, it saves having to lots of prep all the time.
Bacon wrapped around chicken with the chicken wrapped around a low fat garlic creamy sauce is also very, very nice.

9x13 baking pan
0 cal non sick spray
1 cup uncooked brown rice
1 packet low sodium french onion powdered soup mix
1 can Campbells Healthy Request Cream of Chicken Soup (can use cream f celery or cream of musgroom - whatever u like)
Preheat oven to 350 degrees F
Spry pan liberally with non stick spray
Pour rice into pan evenly over bottom.
Sprinkle 1/2 packet lo sodium french onion powdered soup mix over rice
Lay 3-4 ckn breast depending on size on top of rice
Mix can of soup mix with 2 soup cans of water
Cover chicken and rice with soup mixture
Cover with foil and bake for 45-55 mins
Uncover and bake for additional 15 mins
Lets sit for 15mins and serve
For a great variation add broccoli as well.

2 cups rice - $.99
- pan fry the chicken with some garlic and adobo seasoning. Top over rice. You can use water to loosen the drippings for more flavor if you choose too.
This has been my staple for two years. Eat it twice a day web bulking. It's served me so well and it's never dry. It's also great cold so it's good to cook ahead of time for lunch at work.

I got sick of grilling and switched to broiling my chicken lately. I use Real Lemon juice, lemon pepper spice, garlic salt and onion flakes. I'll do 8 breasts at once. Quick and easy!

Thanks for this thread! I'm currently eating 500g chicken a day and 200g rice (uncooked) as the basis for my main meals.
And 500g steak as snacks. I've started turning the steaks to jerky, this makes it easier to carry and snack. I don't have to sit and use cutlery.
The chicken I typicall season and just do in the oven the night before. This tends to mean its a bit dry once eaten cold the next day.

start experimenting with different spices bro throw in peppers tomatoes ect I can make about 5 different meals out of the same ingredients. Just gotta use your imagination

Turkey or chicken breast rubbed with pepper and ground lemon. Minced garlic and onion sprinkled on top. Baked at 375 with little less than 1/4 cup of water at bottom of casserole dish or baking pan. Yum

My go to is one pack of ranch powder to 5-6lbs of chicken in the crock pot for 8-10 hrs. Tender and juicy.Also do the same for lean ground beef. Just cook on the stove top tho.
Another is take a jar of salsa on pour it on the chicken, cover and bake at 400 for 1 hr to 1.5 hr. The longer you cook it the jucier it is.
Also do lemon peppered chicked breast on the grill.
I usually try to cook enough of antthing to last 4-5 days to make things eaiser.

I cut my chicken breasts up prior to cooking and then marinate like I would for fajitas:
1/4c Fajita seasoning
1/2c Lemon Juice
1/2c Water
1/8-1/4c Olive oil.
For a variation use Lime instead of Lemon and add cilantro. This is enough marinade to marinade at least 12 breast, I often do 24 and have no problem coating them all with this same marinade. Slice some onions if you want and add those in.
My breakfast has cubed chicken breast, 1c of Pictsweet frozen seasoning blend (It's onions, bell peppers, celery and parsley), and my eggs.
I agree with every one else that lemon pepper chicken is good. You could also use Creole seasoning (My family likes "Slap ya mama!" and Chacheres) which is just black pepper, chili powder, onion, garlic, cayenne and salt.
You could use the Creole seasoning, 1-2lbs of Chicken meat, an equal amount of the Pictsweet seasoning blend, a couple quarts of chicken broth. Simmer this until the veggies and chicken are cooked. Add some cornstarch (1-2Tbsp depending on how thick you want it) mixed with water (2x's the amount of cornstarch) to the broth at a low boil until it turns clear and thickens. Serve over rice. (This is a quick and dirty cheater version of Etoufee). If you don't thicken this, then it's a soup and just as good. You can substitute crawfish, shrimp, etc. for the chicken.
There's also a lot of pre-mixed spices specially designed for chicken at the grocery store and almost all of those are good. You just sprinkle it on your chicken and cook like you normally would.
Since you want quick and easy try making life easier on yourself by purchasing pre-cut and frozen seasoning veggies. Onions, bell peppers, stew veggies and many others are available frozen or pre-cut in the produce department. Buy premixed seasonings and try several of them. The Fresh-Takes by Kraft are nothing more than bread crumbs mixed with shredded cheeses, so don't waste your money on those.
Also, you can put chicken breast through your food processor with a couple tablespoons of water to make a "ground" chicken which has less fat and is less expensive than the ground turkey from the grocery store. This can be used in any place you would use any other ground meat. You can do this in batches and freeze it too. So you could easily make chicken tacos with this and taco seasoning or chili, etc.

Oh! Chicken breast cubed, mixed veggies, rice and broth can be a quick and easy soup. Replace the broth with a cream of mushroom, cream of chicken, cream of roasted chicken and mushroom, or other cream based soup of your choosing and you have a quick and easy casserole.
