I'm hosting Christmas this year at my house. I've got a LARGE Spanish family coming (the gf's side) and they all know I can cook. They all love to cook also so it was an easy fit for me.
This year I want to make something over the top..... So far for proteins I'm thinking:
1 - Turkey
2 - Rabbit (stewed)
3 - Duck
I'm not sure how I want to cook the duck yet. The turkey will take about 6 hours in the oven so roasting the duck is kind of out. I'm thinking of pan searing duck breast and finishing it off in the oven and then serving it sliced over roasted veggies.
Anyways - I'm lookin for some ideas. What are some of the things you guys cook and what are the recipes if you don't mind sharing?

For thanksgiving, we deep fried a duck and it was really good. Need a deep fryer though and do it outside.

my favorite is boneless leg of lamb covered with 1/4"-3/8" thick layer of sea salt, all the way around. put it on a suspended grill in a pan then roast in oven for 2.5-3 hours, start at 500 degrees for 30 minutes then lower it to 350 for the rest of the cooking time. if oven won't be available you can always use a grill. for serving you peal off the salt, it'll peal off like a shell. you'll end up with a very juicy, perfectly cooked, perfectly salted leg of lamb. no other spices needed. NOTE: make sure you get the meat with a fatty layer on it for added taste. don't worry the fat will all melt away by the time its cooked.

I found rabbit in my shoprite!
Only $8 - it's frozen but I figured I'd pick one up and make scarpariella with it tonite

funny I have more rabbits that flies in my back yard, my kids hunts them all the time and BBQ them.

I personally like to eat Italian Food on Thanks giving as well as Xmas. Xmas eve we have a few different courses
usually home mad calzone, pizza, fish, shrimp, salami pie....then toasted walnuts then pastries for desert
