I'm hosting Christmas this year at my house. I've got a LARGE Spanish family coming (the gf's side) and they all know I can cook. They all love to cook also so it was an easy fit for me.

This year I want to make something over the top..... So far for proteins I'm thinking:

    1 - Turkey
    2 - Rabbit (stewed)
    3 - Duck

I'm not sure how I want to cook the duck yet. The turkey will take about 6 hours in the oven so roasting the duck is kind of out. I'm thinking of pan searing duck breast and finishing it off in the oven and then serving it sliced over roasted veggies.

Anyways - I'm lookin for some ideas. What are some of the things you guys cook and what are the recipes if you don't mind sharing?

For thanksgiving, we deep fried a duck and it was really good. Need a deep fryer though and do it outside.

I have a deep fryer.... I was going to do the turkey in it but last time I burnt the skin and I don't want to fvck it up.

A duck is a lot smaller tho for it might only take 10 minutes to fry

Spanish dont use a deep fryer so to speak. It's all done with grease/oil in a pan so they can flip it and pretend they are cooking.

my favorite is boneless leg of lamb covered with 1/4"-3/8" thick layer of sea salt, all the way around. put it on a suspended grill in a pan then roast in oven for 2.5-3 hours, start at 500 degrees for 30 minutes then lower it to 350 for the rest of the cooking time. if oven won't be available you can always use a grill. for serving you peal off the salt, it'll peal off like a shell. you'll end up with a very juicy, perfectly cooked, perfectly salted leg of lamb. no other spices needed. NOTE: make sure you get the meat with a fatty layer on it for added taste. don't worry the fat will all melt away by the time its cooked.

I thought that is what you do when your woman is putting a bird in the oven, you sneak up behind her, shove her head into the oven so she cant move, tie her hands behind her back with her apron strings then stuff her bird...

Fry the rabbit and dip it in queso!

If that ain't close to Spanish, then what is!

As for the duck breast, stuff/wrap with jalepeno and cream cheese, and then wrap all if it in bacon, and grill!

    My favorite holiday meal recipe.

I buy a bottle of wine. Buy some tasty desert. Then go to someone elses house.

With my luck, I'd ram her so hard in to the oven, she'd get burned and take my ass to court. I prefer clog-fvcking her over the kitchen sink.
