They talk about flexible dieting. Talk about how coaches that have a set dietary plan/foods for all clients, when their clients can't stick to it they blame the client not them.
But we know pretty well what foods work in the bodybuilding world. If I hire a coach, and fail on the diet (assuming I'm actually trying), and there is a well known way how to build muscle or prep for a show or what not, who's fault is it? Is it the coaches for not thinking outside the box and supplying a meal plan that works for my me? Or my fault because I may just not have the discipline necessary to be a bodybuilder?

It is the athlete’s fault. I have seen various manners in which these are provided. I have seen the ones that give you the exact food. If your a fussy eater, you just mention which foods are not right for you and they get switched.
I have also seen where the macros are provided and examples of possibilities are provided. This takes a little bit more work from the athelete however it provides variation.
The coach ( at least a good one) can lead you to water. They cannot force you to drink it.
Having a good coach is important but you need to put in the effort.

I mean coaches that give out more of a cookie cutter plan.
Like meal 1: eggs egg whites and oats
meal 2 3 4 and 5: chicken breast, tilapia, cod, tuna, or lean turkey
Sweet potato or rice
Broccoli or asparagus
2 servings of peanut butter or almonds twice a day with any meal

That one must be from a great coach... two servings of PB!
For any coach to just give out a cookie cutter approach and not monitor and make adjustments, they shouldn’t be providing services as a coach.
I know my body pretty well and even I need to fine tune any diet based on the results.
A real coach should adjust as required. Real coaches know this.
So whether it is a cookie cutter or not, the ability to adjust is on the coach.
