if someone were to begin experiencing progesterone related gyno due to deca use, what would the symptoms be? is it the same as gyno from test, such as nipples irritating etc?

It would most likely be from increased prolactin, not progesterone.

I've never seen any anacdotal evidence stating Deca or Tren increase progesterone...

Puffy, irritated and lactating nipples (brown/white liquid from nipple) are sides/conditions to watch.

Get some Cabergoline and run it at 0.5mg/E3D when using 19-Nor's IMHO. Or keep it on hand.
