My 5000iu of HCG came in a single ampule, with 1ml bacteriostatic water in a seperate ampule. I mixed the two together, but only took 1/5ml - because I do not want to take all 5000iu at once.
Once i've opened the ampule (broken the top peice of glass), can I store the remainder in the fridge - with the open/broken end unsealed? or should I just take the remainder now

You should have put it into a sealed sterile vial...
Or loaded it into slin pins (vial is better)

That would be safer than leaving it in an open amp....
I would look to store it in separate slin pins if you cannot get a vial...

You might be able to find a bottle of sterile water, draw it out, then dispense the HCG into newly emptied bottle. Keep everything sterile of course.

Just load it up into a bunch of insulin syringes (put the caps back on) and keep them in the fridge.
