Test E and Anavar cycle critique

Height-5'9"
Weight-183lbs
BF- low but unsure.
Cycle History- test e 500mg/wk 12 weeks
PCT- HCG 500iu eod and Nolva 40/20/20/20

NEXT CYCLE:
Test E 625mg/wk 12 weeks
Nolvadex eod 20mg
HCG 250iu 2x/wk while on
PCT- Nolvadex 20/20/20/20

I have an appointment with a dietitian to get my intake sorted out properly this upcoming Thursday.

Now that the prelims are over. I would like to hear your opinion and expected outcomes of this next cycle plan. I gained about 21lbs on my previous cycle then experienced a rapid decrease of 7lbs over 2 weeks post cycle. I was happy with the result but I noticed a loss in dry definition while on only test e and hope to maintain the definition I have built over the years this next run with the addition of nolvadex during the entire cycle. Thoughts about that?
