I currently use test c once a week knowing its a long ester. Is there any benefit in doing it twice a week?

Agree. I do every Wednesday and Sunday. Mostly people do Monday and Thursday

Pinning once a week should in theory be fine but since the ester science and half lives of these compounds are not definite, people like to inject twice a week.
