I cant find any GI info on wheat sprouts no matter how hard I try but given the fat, protein and fiber content of it I would say that the gi must be pretty low. In other words the combination of fat and carbs in it wont matter all that much. A easy food that tastes good and gives you LOADS of nutrients easily. Mix it with your oatmeal at breakfast or heck mix it down into your rice before eating.
