Have him bring chicken breast, tuna and some flax along and eat that stuff all day... He should basically precook a lot and get a cooler or something along those lines, and just bring everything he will need with him... bring some whey too, and a gallon of water and a water bottle...

With little activity he will have a hard time losing good weight.... His calories will have to dropped quite a bit for him to lose weight...
Truck stops are more than a rest stop with bad cooking .. they are a hang out.. So he, I am sure, will want to stop and visit ... if not better .. but get the real story of what he is willing to do..
If he will make these stops he needs to know and be willing to order in such a way that is conducive to a healthy lifestyle. Show your dad that he can order grilled instead of fried.. he must cut down on condiments.. or do without..
Anytime he can bring food is the best, but i am sure he will want to stop no and then ....

If he is driving accross the country, maybe he could join a national gym chain so there is one available to him after hes done deliving loads regardless of where he is in the country. Works for pilots and other people that travel. He could also try some pre-packaged meals off some of the popular diet plans out there (IE: Have you called Jenny yet!!!) hehe I still love Kirstie Alley even if she is a little heavy.
