i love veggies - broccoli, coliflower and salads mainly - and eat them with practically every meal. they do not count towards your daily kcals, so i wouldn't worry too much about them. try and stay away from veggies such as corn and carrots.

so I shouldnt count the carbs in Brocolli, zuchini, cauliflower,etc as my total carbs intake while cutting?
Nah, some veggies actually have a negative calorie - i.e. celery. It takes more to digest it than it actually has in it!
I wouldn't sweat it - you'd end up counting like 1 calorie here, 5 here, no worries.
