Does it matter how long you cook food for?

I know this sounds daft, but as the question asks - if I cook say, a chicken breast for 30minutes so it goes much smaller than normal, does it affect the nutritional content of it? Especially, the protein/amino bit?

Protein sources only aren't effected, though?

I.e. a juicy bloody steak is the same as a sizzled dried up well done one?

yes. Unless you burn the steak like novastep said.
