anyway, question is, is there any concerns for overcooking the potatoes? will cooking them too much affect their GI? if so, how can you tell when is too much?
just a little frustrating cause unless the pieces are all the exact same size, it's almost impossible not to have some softer and some harder. just want to make sure their GI won't be compromised.
