Either way. I'll switch a lot. I never really do the same thing week in and week out
I was always told to get in 4 movements per body part. Therefor I do 4 sets for each movement. That would be giving me 16 total sets per muscle. Every now and then I will do 3 movements instead of 4, but usually bang out 4...Just how I like to do it.

as long as you are busting your @$$ on each set
rule of thumb for me: Big muscles 10-12 sets total; small muscles 7-8 sets
This is what i do - Tell me if its good procedure :
(usualy do 10 reps of each - sometimes 8 for last set - allthough i know everyone will say for mass 6 reps)
Chest - 4 Sets
Back - 4 Sets
Shoulders - 4 Sets
Upper Legs - 4 Sets
Biceps - 3 Sets
Triceps - 3 Sets
Calves - 3 Sets

Sorry, i mean i do 4 exercises for chest back shoulders and upper legs - 3 sets for each exercise - usually 10 reps
and 3 excercises for calves biceps and triceps - 3 sets per exercise - usually 10 reps

bis looks good (as long as you have one exercise for the branchialis such as hammers and reverse grip curls etc.)
I would cut 1 set out of each tri exercise
calves I wont comment because it's somehow genetically related and some people get big calves doing nothing, some get is over hi rep exercise, some over low rep heavy movements and some not anything noticeable after trying EVERYTHING
